The Big Pond #22: The Story of the Brezn

The pretzel, known as a “Brezel” or “Brezn” in German, is not an ordinary pastry. It has a century-old history full of myths and stories. Where did it come from? Why does it have this special shape that vaguely resembles a hug? And how come it’s doused in lye? In this episode of The Big Pond, we trace the pretzel’s story from its origins to today. 

We learn about a baker who had to invent a very special pastry to avoid being executed and a mysterious accident with washing soda. We visit a production site in the German capital, Berlin, as well as in Mainz in Rhineland where pretzels are produced by the millions. Yep, pretzels are a big business worldwide. We also meet a young baker in Bavaria who is researching the influence of rock ’n’ roll music on pretzel dough.

We also investigate the health benefits of the pretzel as described by a researcher at Potsdam University, and we learn about century-old pretzel-customs from the team of the BrezelMuseum near Stuttgart in Southwestern Germany. And there is more – the French in the region of Alsace even named an airline after the pretzel: Bretzel Airlines. Well, it’s not really an airline, but check it out anyway to test your French skills. So take that, bratwurst, burger, and baguette! The pretzel’s gonna get ya!
